â 2 cups fresh methi (fenugreek) leaves, chopped
â 2 medium potatoes, peeled and cubed

â 1 green chili, chopped (optional)
â 1 tsp ginger-garlic paste
â 1/2 tsp turmeric powder
â 1/2 tsp red chili powder
â 1/2 tsp coriander powder
â 1/2 tsp garam masala
â Salt to taste
â 1 tbsp lemon juice (optional)
â 1 tsp dry mango powder (amchur) (optional)
Instructions:
1. Prepare Methi Leaves:â Wash the methi leaves thoroughly and finely chop them. Sprinkle some salt over them and let them sit for 10 minutes to reduce bitterness. Then, squeeze out excess water.
2. Cook the Potatoes:
â Heat oil or ghee in a pan. Add cumin seeds and mustard seeds. Let them splutter.
â Add chopped onions (if using) and sauté until golden brown.
â Add ginger-garlic paste and green chili. Sauté for a minute.
â Now, add the cubed potatoes, turmeric powder, and salt. Stir well. Cover and cook for 5-7 minutes on medium flame, stirring occasionally.
3. Add Methi Leaves & Spices:
â Add the chopped methi leaves to the pan. Mix well and cook for 3-4 minutes until they wilt.
â Add red chili powder, coriander powder, and garam masala. Stir everything together.
4. Final Touches:
â Cover and cook on low heat for another5 minutes until the potatoes are fully cooked.
â Add dry mango powder (amchur) and mix well. If you like, squeeze some lemon juice for extra tanginess.
5. Serve:
â Turn off the heat and serve hot with roti, paratha, or rice.
