The festival of Govardhan Puja, celebrated the day after Diwali, is considered especially significant in the Mathura and Govardhan regions. On this day, Lord Krishna is offered Annakut, and the same Annakut is distributed among devotees as prasad in temples. In fact, Annakut is prepared immediately after Diwali, consisting of a mixed dish of millet khichdi, curry, puri, and seasonal vegetables. Many people make it more nutritious by adding green vegetables to the millet khichdi. This dish not only tastes delicious but is also very beneficial for the body. Especially during this season, when winter begins, consuming Annakut provides both warmth and nutrition to the body.
Due to the changing weather during the month of Kartik, problems like cold, cough, fever, eye irritation, and skin infections increase. During these times, dishes like Annakut are rich in fiber, vitamins, and minerals, which strengthen immunity and protect against infections. Bajra Khichdi has a warming effect and is rich in protein, which protects the body from cold and boosts immunity. Kadhi is rich in calcium and keeps the body warm, but those with a cough should limit their consumption.

The mixed vegetable dish prepared during Annakut is also extremely beneficial for health. Seasonal vegetables such as spinach, fenugreek, radish, carrots, peas, and eggplant are included. These vegetables are a good source of vitamins, iron, and fiber, which nourish the body from within and protect against diseases caused by changing weather. Therefore, it is said that Annakut is not just an offering to God, but also acts as an Ayurvedic medicine.
